ingredients:
1 1/2 tbsp cacao (can be substituted with raw baking cocoa)
1 tsp spelt or wholemeal flour
1 scoop protein powder (I used cookies'n'cream flavor)
2 tbsp lowfat greek yoghurt (or SKYR)
2 tbsp milk (I used unsweetened almond milk)
1 small egg
2 tsp maple syrup
a pinch of salt
some freshly grated vanilla or vanilla flav drops
some melted coconut oil
optional: grated almonds as topping
directions:
lightly coat a 1-cup ramekin or a mug with coconut oil. set aside.
in a small bowl, whisk together the cacao, protein powder, flour and salt.
in a separate bowl, combine yoghurt with milk, the egg, maple syrup and vanilla.
now incorporate the dry ingredients and stir well.
pour the batter into the prepared ramekin or mug.
optional: before baking, add the almonds as a topping.
now you've got two options:
1. bake in a convection oven for about 10-15 mins at approx. 180° celcius.
2. microwave on medium for 2:30 mins. let sit for a few minutes and check if you need to microwave it for another 1-2 minutes!
when removed from the oven or microwave a toothpick should come out clean but the brownie cake should still feel soft and fluffy at a touch.
let sit for at least 3 mins afterwards.
