quick single serving chocolate brownie (mug) cake



ingredients:

1 1/2 tbsp cacao (can be substituted with raw baking cocoa)
1 tsp spelt or wholemeal flour
1 scoop protein powder (I used cookies'n'cream flavor) 
2 tbsp lowfat greek yoghurt (or SKYR)
2 tbsp milk (I used unsweetened almond milk) 
1 small egg
2 tsp maple syrup
a pinch of salt
some freshly grated vanilla or vanilla flav drops
some melted coconut oil

optional: grated almonds as topping


directions: 

lightly coat a 1-cup ramekin or a mug with coconut oil. set aside.
in a small bowl, whisk together the cacao, protein powder, flour and salt.
in a separate bowl, combine yoghurt with milk, the egg, maple syrup and vanilla.
now incorporate the dry ingredients and stir well.
pour the batter into the prepared ramekin or mug.

optional: before baking, add the almonds as a topping. 

now you've got two options:
1. bake in a convection oven for about 10-15 mins at approx. 180° celcius.
2. microwave on medium for 2:30 mins. let sit for a few minutes and check if you need to microwave it for another 1-2 minutes!

when removed from the oven or microwave a toothpick should come out clean but the brownie cake should still feel soft and fluffy at a touch.
let sit for at least 3 mins afterwards. 
serve warm and ENJOY!

apple cinnamon muffins



ingredients: 

220g spelt or wholemeal flour

30g finely grated almonds/almond flour
100g plant stevia
1 ½ tsp baking soda
2 medium free range eggs
3 small apples, diced
2 tsp SKYR (or greek yoghurt)
2 tsp coconut oil, melted
cinnamon, salt, nutmeg

optional sprinkles:
2-3 tbsp oats
1 tsp flax seeds
1 tsp chia seeds
 

directions:

preheat your convection oven to 180° celsius.
combine flour, almond flour and baking soda in a mixing bowl. in another bowl, combine stevia, eggs, SKYR and coconut oil. 
now microwave the diced apples for a few minutes until they are mashed. you might wanna use a fork to mash them completely.
add the mashed apples to the wet ingredients. stir well using a (hand) mixer.
add a pinch of salt and season with cinnamon and nutmeg.
line a muffin tray with muffin papers. fill with the dough.

optional:
combine all the sprinkles ingredients and top the muffins with the sprinkle mixture.

now bake for 15-20 minutes or until a toothpick comes out clean.
let cool and ENJOY!

chewy christmas cookies




ingredients:

225g spelt or wholemeal flour
2 tbsp SKYR (or greek yoghurt)
75g plant stevia
75g raw cane sugar
100g mashed banana
1 medium egg
50g raw dark chocolate (I used 75% dark chocolate), cut into small pieces
raw, grated vanilla (or vanilla extract)
1/2 tsp salt
 

directions:

preheat your convection oven to 180° celsius.
combine the raw cane sugar, stevia, vanilla, salt, SKYR, mashed banana and melted coconut oil in a mixing bowl and stir well using a (hand) mixer. add the egg, stir again.
now combine with the flour and add the dark chocolate pieces. stir well one last time.
let the dough sit for about 15-30 minutes, then place small balls of dough on a baking tray lined with parchment paper.
slightly press on each ball to flatten them a bit, now bake for about 8-10 minutes.
